Then I saw these really cute Grinch cupcakes on Pinterest but couldn't find a source for the recipe. Then I decided I had to figure information technology out myself.
While I was searching for that recipe, I found this one that had a heart broiled into the eye of the cupcake. How crawly is that?
So of class, since I always to take exercise a little "extra", I decided to make Grinch cupcakes with a eye inside and put the Grinch face up on top!
Which means that this recipe takes fashion longer to make than most of my recipes do.
It's not particularly hard. But in that location are a ton of steps! (Unless you lot take the easy mode out…but more on that later).
However, I think the end upshot is so cute, it'south worth it!

Prep work
Heat the oven to 350℉.
Take the butter, eggs, buttermilk and cream cheese out of the refrigerator a few hours alee of time. Making the cupcakes with these ingredients at room temperature will upshot in light, airy cupcakes and fluffy icing.
Grease a nine″ cake pan or line the bottom with parchment newspaper.
I similar to employ parchment paper considering information technology makes it so much easier to become the cake out of the pan.
To do this trace around the bottom of your cake pan onto the parchment paper. Cut out the circle and put it in the bottom of the pan.
Put cupcake liners in a 12-cup muffin tin.
If yous are using newspaper cupcake liners, the colour from the cupcake batter tends to launder out whatever blueprint on the liner.
And so I similar to employ plain white ones to bake the cupcakes in and then add more decorative ones effectually them after they are cooked.
How to make red velvet cake hearts
The easy manner
If you're taking the easy style out, but bake a scarlet velvet cake mix post-obit the instructions on the box.
Then cut the hearts out with a cookie cutter after it has cooled.
You'll but need i relatively sparse layer for the hearts, so you'll have some left over to make a block or some cupcakes with.
To make red velvet cake from scratch
Vanquish ¼ loving cup (half a stick) unsalted butter, ¾ cup granulated sugar and an egg with the mixer until they are light and fluffy (two to 3 minutes).
Mix in most ½ teaspoon of ruddy gel food coloring.
So add i Tablespoon of cocoa powder.
If it doesn't look cerise enough, y'all can add together more food coloring. But be careful not to put in as well much or it can add together a bitter flavor to the cake.
In a minor bowl, whisk together i loving cup plus 2 Tablespoons of cake flour and ¼ teaspoon of common salt.
Add 1/3 of the flour mixture into the creamed butter mixture mixing at low speed to first and then increasing to medium until the flour is combined.
Add ¼ cup of buttermilk to the creamed butter also starting at depression speed and then increasing to medium speed. Shell until it is combined.
Repeat this process with the side by side 1/3 of the flour mixture, followed by another ¼ cup of buttermilk, followed by the terminal i/3 of the flour mixture.
Mix in ½ teaspoon vanilla until combined.
And then add 1 Tablespoon white vinegar and beat until combined.
Finally add one½ teaspoons blistering soda.
Cascade the cake batter into a 9″ cake pan.
Bake at 350℉ for 30 to 35 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
Let cool in the pan on a wire rack for v minutes.
And so remove the cake from the pan and let cool completely on the wire rack.
Move the cake onto a apartment surface with the broiled side upwardly (This is the side that has a slight chaff on it). It is easier to cutting out the hearts cleanly this manner.
Or if you adopt, you lot can cut off the crust (I don't carp).
Apply a small heart cookie cutter to cutting 12 hearts out of the cake. Put them on a plate and prepare aside.
How to make Grinch cupcakes with a middle inside
The easy style
If y'all're doing the easy way, mix upwards a white cake mix following the instructions on the box.
Mix in ½ teaspoon of neon light-green food coloring.
Spoon the cake mix into lined muffin tins and push button a red velvet heart into the center of each i
Then bake in cupcake tins as directed on the box.
Before continuing, put a minor pencil mark at the front of each cupcake so you know which way the eye is facing. You'll demand this later on to put the Grinch confront on the correct side.
How to bake primal lime cupcakes from scratch
Grate 1 Tablespoon of lime zest.
Then juice the limes to become ¼ cup of lime juice.
In a modest bowl, combine two cups all-purpose flour, ¼ teaspoon blistering soda, 2 teaspoons baking powder and ¼ teaspoon salt. Set aside.
In some other bowl, mix ¾ loving cup buttermilk, ¼ cup lime juice and 1 teaspoon vanilla excerpt. Set aside.
In the mixer, beat butter, carbohydrate and lime zest on medium speed until low-cal and fluffy (2 to 3 minutes).
Add together an egg and beat out until information technology is combined, scraping the sides with a spatula when necessary.
Do the same with another egg.
Mix in ¼ teaspoon neon green gel food coloring until the color is evenly distributed.
Reduce the speed on the mixer to low.
Add together in 1/3 of the flour mixture and mix just until information technology is combined, scraping down the sides with a spatula when necessary.
So add in ane/two of the buttermilk mixture and mix just until information technology is combined, scraping downwards the sides if necessary.
Echo the process with the next 1/iii of the flour mixture, the balance of the buttermilk mixture and then the last 1/iii of the flour mixture.
To prevent the cupcakes from getting tough, but beat out every bit much as is necessary to combine the ingredients.
Spoon the batter into the muffin tins, filling them nearly iii/4 total.
And then push one of the scarlet velvet hearts down into the center of each cupcake.
Bake at 350℉ for 25 minutes or until a toothpick inserted beside the hearts comes out make clean.
Motility the muffin tin to a wire rack and let the cupcakes cool completely.
Now, you'll see a centre in the cupcake when you cut it open the right way.
Earlier continuing, mark the front side of the cupcake liner with a pencil.
This will let yous know later on which side the heart is facing toward so you can put the Grinch confront in the correct location.
Y'all tin can make the marking under the cupcake rather than on the side if you lot don't want anyone to see it.
Brand buttercream icing
The easy way
The easy style to make buttercream frosting is not to make information technology at all. You can buy information technology already made and and then add the colour as directed beneath.
I have tried the pre-made buttercream icing from Whole Foods bakery and it was delicious. Just there are lots of options available, so just notice one you like.
How to make buttercream frosting from scratch
Cut 1 cup (2 sticks) butter into ½ inch chunks
In the mixer, trounce the butter on medium speed until smooth.
Reduce the mixer speed to depression.
And then add 3 to 4 cups of icing carbohydrate (depending on how thick you similar your icing) to the mixture in batches. Wait until the previous addition is completely combined before calculation the next one.
Increase the speed to medium-high and beat until fluffy and pale in color.
So mix in 1/8 teaspoon of table salt, 2 Tablespoons of buttermilk and 2 teaspoons of vanilla extract. Using clear vanilla volition keep the icing looking whiter.
Decorate the Grinch cupcakes
The first step is to divide the icing into 4 bowls (which volition exist 4 colors of icing):
- First, movement about 2/3 of the icing into the showtime bowl (this volition exist for the light-green icing).
- Then movement a small scoop of the remaining icing into the 2nd bowl (this will exist black for the eye brows so you lot don't demand very much).
- Next move a larger scoop of the remaining icing into the third bowl (this volition remain white for the Santa hat trim).
- Move the remaining icing into the fourth bowl (this volition be for the crimson icing).
To make sure y'all have plenty of each color of icing, only make one color at a fourth dimension.
Then pipe information technology onto the cupcakes earlier making the next one.
That mode if you run out, you tin can use some of the icing from the other bowls to terminate the layer.
Make green icing
To brand the caput of the Grinch on the cupcake, we're going to need some lime green icing.
Nosotros'll make this in the outset bowl (that has the nearly icing in it).
Add in ½ teaspoon Betty Crocker neon green gel food coloring.
If information technology's not bright enough dark-green, effort adding some more than (but non besides much or information technology will add a bitter flavor to your icing).
If you don't accept neon light-green food coloring, you tin can make your ain by adding 2 or 3 drops of bluish food coloring with 15 to 20 drops of yellow food coloring. Then conform the color every bit necessary.
Remember that nutrient coloring usually gets darker as it sits, then don't make the colour also dark.
Pipage the Grinch head on to the cupcake
Put a large round tip (I used Wilton 2A) onto a pipe bag.
Fill up the purse with the lime green icing.
Then start at the outer edge of the cupcake and circle around it two or three times making smaller circles as you go until the top of the cupcake is completely covered.
Echo for the rest of the cupcakes. If you run out of green icing, take some from the other bowls.
Make red icing
Getting true red icing is quite difficult since mixing reddish with white often comes out pink.
The best way I've found to set up this is to get the right kind of food coloring.
I've tried a few different brands, and this one* from Americolor produces the best red with the least amount of food coloring.
(I have never been successful getting a true red colour using the nutrient coloring that y'all purchase at the grocery store.)
Nosotros're going to brand this in the bowl that has the next largest amount of icing in information technology.
Mix in most one/eight teaspoon of AmeriColor Super Red food coloring.
If it doesn't look ruby-red enough, effort adding a bit more. Simply don't add too much since it can bear on the season of the icing.
Also go on in listen that the color will darken equally it sits.
Pipage the Santa hat on to the Grinch caput
At present we're going to pipe Santa hats on height of the green frosting using the aforementioned round tip equally you lot did for the green icing.
To do this, start at about the 2nd green icing circumvolve.
Then piping around in tight circles going up to a point, like you would if you were making a soft ice cream cone.
(Optional) Whiten the frosting
This is an optional step if y'all want your Santa chapeau trim to be whiter.
Since buttercream icing isn't pure white (particularly if you used brown vanilla), you can add some white food coloring* to lighten it up the remaining icing a scrap.
Information technology won't become pure white, simply y'all can get it to exist more of any ivory color. Which will look quite white beside the red.
Add this to the bowl with the larger spoonful of icing in it. You won't need much food coloring since at that place isn't much frosting in this bowl.
Piping on the Santa hat trim
Add a pocket-size star-shaped tip (I used Wilton tip eighteen) to the end of a piping handbag.
Then pipe white trim around the bottom of the red Santa chapeau so that it covers the join betwixt the red and greenish icing.
Then add a little ball of white icing at the height of the hat.
If you are making your ain eyes, switch the piping tip to a minor circular one (similar a Wilton 6). Then make ii circles close together on the green icing just below the Santa chapeau. Remember to do this on the side where you made the pencil mark on the cupcake liner.
Make black icing
Making black icing is kind of similar ruddy.
It's very difficult to plough white into pure black.
And the type of food coloring you use really makes a difference.
I find that AmeriColor Super Black* comes the closest without needing to utilize a whole bottle of food coloring.
Add a modest corporeality of the black food coloring to the final basin of icing.
If it still looks grey, add some more. But non too much or the flavor of the icing will modify.
As well, black icing definitely gets darker so it volition look blacker on the cupcakes than information technology does in the bowl.
Pipe on the Grinch face
Add a small round tip (Wilton two) to a piping bag and make full it with black icing.
If you are making the eyes with icing, add a black dot in the middle of each of the white dots you made earlier.
(Having said that, I usually cheat and employ these processed eyes so I don't have to brand them. Don't forget to put them on the side where the heart will exist facing forward.)
So add an centre brow over elevation of each eye.
Making them slant in towards each other makes the face up look a little meaner.
Woo hoo! Y'all're finally done!
Merely I remember they're cute plenty that they're worth all the try.
